Ingredients
Scale
Protein & Main Ingredients
- 1 pound Ground Turkey
- 1 Onion (diced)
- 1 can Black Beans (drained and rinsed)
- Avocado (for garnish, sliced)
Spices & Seasonings
- 2 teaspoon Garlic Powder
- 2 teaspoon Cumin
- Lime Juice (to taste, about 2 tablespoons)
- Salt (to taste)
Grains
- 1 cup Long Grain Rice
Other Ingredients
- Romaine Lettuce (chopped, about 2 cups)
- Vegan Butter (1 tablespoon)
- Water (for cooking rice and mixing with turkey, about 1 cup total)
- Tomato Sauce (not originally specified, estimated 1/2 cup for turkey simmer)
Instructions
- Cook the turkey filling: In a skillet over medium heat, sauté the diced onion and minced garlic until the onion becomes translucent and fragrant. Add the ground turkey and cook until it is fully browned, breaking it apart with a spatula. Stir in the garlic powder, cumin, tomato sauce, and a splash of water. Allow the mixture to simmer gently until thickened and flavorful, about 10-15 minutes.
- Make the cilantro lime rice: In a medium pot, bring water, rice, and a pinch of salt to a boil. Lower the heat to a simmer, cover, and cook the rice until tender and all water is absorbed, roughly 15-20 minutes. Remove from heat and stir in vegan butter, chopped cilantro (about 1/4 cup), and lime juice to brighten the flavor.
- Assemble the bowls: Start with a generous scoop of the cilantro lime rice as the base in each bowl. Top with the seasoned turkey filling, followed by chopped romaine lettuce, black beans, and slices of fresh avocado. Add any preferred garnishes or extra lime juice before serving.
Notes
- For extra spice, consider adding chili powder or crushed red pepper to the turkey filling.
- Black beans can be substituted with pinto beans or kidney beans based on preference.
- To make the dish vegetarian, substitute ground turkey with cooked lentils or plant-based meat alternatives.
- Use brown rice for a higher fiber option, though cooking time will be longer.
- Ensure avocado is ripe for the best creamy texture as a garnish.
