Description

A refreshing and vibrant Strawberry Fruit Salad topped with fresh mint and crunchy pistachios, dressed in a tangy honey-lemon-orange dressing. Perfect as a light snack or a healthy dessert.

Ingredients

Scale

Dressing

  • 1/4 cup fresh lemon juice
  • Zest of 1/2 lemon
  • 1/3 cup honey
  • 1/4 cup orange juice
  • 2 tablespoons olive oil
  • 2 tsp poppy seeds

Salad

  • 2 pounds fresh strawberries, hulled and sliced
  • Handful fresh mint leaves (optional)
  • Chopped pistachios (optional)

Instructions

  1. Make the dressing: Whisk together fresh lemon juice, lemon zest, honey, orange juice, olive oil, and poppy seeds in a bowl until well combined. Chill the dressing in the refrigerator until ready to use to allow flavors to meld.
  2. Prepare the salad: Place the sliced strawberries in a large mixing bowl. Pour the chilled dressing over the strawberries and gently toss to coat them evenly with the dressing.
  3. Add garnishes: Just before serving, sprinkle fresh mint leaves and chopped pistachios over the dressed strawberries to add freshness and a satisfying crunch.

Notes

  • For best flavor, chill the salad for 10-15 minutes before serving but add mint and pistachios last to keep them fresh and crunchy.
  • Substitute pistachios with almonds or walnuts if desired.
  • This salad is best served fresh and is not recommended for long storage.
  • Adjust sweetness with additional honey if strawberries are tart.
