Bread & Spreads
- 2 slices thick crusty bread (sourdough preferred)
- 2 teaspoons softened butter (or mayonnaise)
Cheeses & Toppings
- 2 slices mozzarella cheese
- 2 heaping tablespoons shredded cheddar cheese
- 1 teaspoon oregano leaves (or Italian seasoning or other fresh herbs)
- 1 large roasted red pepper (from a jar, halved and patted dry)
- 2 heaping teaspoons creamy goat cheese (or cream cheese spread)
Instructions
- Grill Mushrooms: Heat a grill or grill pan and cook the mushrooms until softened and cooked through, about 4 minutes per side. Season with salt and black pepper, then set aside to cool slightly.
- Prepare Bread: While mushrooms cook, spread softened butter on one side of each bread slice. Place the bread butter-side down on a clean surface. On one slice, layer 1 slice of mozzarella cheese, all of the shredded cheddar cheese, half the oregano leaves, and the roasted red pepper halves.
- Add Mushrooms & Goat Cheese: Place the grilled mushrooms on top of the layered ingredients, distributing them evenly. Spoon the creamy goat cheese over the mushrooms, then add the remaining slice of mozzarella on top. Cover with the second slice of bread, buttered side facing up to form a sandwich.
- Grill Sandwich: Heat a skillet or grill pan over medium to medium-high heat. Place the sandwich in the pan and grill for 3 to 5 minutes per side until the bread is golden brown and the cheeses have melted. For best results, press the sandwich down with a heavy object like a cast iron lid or use a panini press to ensure even cooking and melting.
