Instructions
- Preheat Oven and Prepare Baking Sheets: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats to prevent sticking and ensure even baking.
- Cream Butter and Sugar: In a stand mixer, beat the softened unsalted butter and granulated sugar together until the mixture is light and fluffy, which should take about 4 to 5 minutes.
- Add Egg Yolk and Vanilla: Incorporate the large egg yolk and vanilla extract into the butter and sugar mixture. Mix until just combined, making sure to scrape down the sides of the bowl to blend everything evenly.
- Mix in Salt and Flour: Gradually add the salt and all-purpose flour to the wet ingredients. Mix gently until the dough starts to come together. It should be slightly crumbly but hold its shape when pressed.
- Form Dough Balls: Roll the dough into balls about 1 tablespoon each and place them evenly spaced on the prepared baking sheets.
- Create Thumbprint Indentations: Using your thumb or a 1/2 teaspoon, press a small indentation in the center of each dough ball, being careful not to press through.
- Fill with Jam: Spoon approximately 1/2 teaspoon of your favorite jam or preserves into each indentation, filling the wells without overflowing.
- Bake the Cookies: Place the baking sheets in the preheated oven and bake the cookies for 8 to 10 minutes, until they are just set and the bottoms and edges begin to turn a slight golden color.
