Ingredients
Scale
Chicken & Marinade
- 1 pound Chicken Breast (can substitute with thighs for juiciness)
- 2 tablespoons Olive Oil (can use sesame oil for distinct taste)
- 1 teaspoon Paprika (smoked paprika adds a deeper taste)
- 1 teaspoon Garlic Powder (fresh minced garlic can be used)
- 1 teaspoon Kosher Salt (adjust if using regular salt)
- 1/2 teaspoon Black Pepper (freshly ground recommended for best flavor)
Bang Bang Sauce
- 1/2 cup Mayonnaise (Greek yogurt can be a lighter alternative)
- 1/4 cup Thai Sweet Chili Sauce (homemade sauce can be used)
- 1 tablespoon Sriracha (adjust based on spice preference)
- 1 tablespoon Honey (maple syrup can serve as a substitute)
Instructions
- Prepare the Chicken: Cut the chicken breast into evenly sized, bite-sized pieces to ensure uniform cooking. Place the pieces in a bowl and add olive oil, paprika, garlic powder, kosher salt, and black pepper. Mix thoroughly to coat every piece with the marinade and let it sit for 5-10 minutes to soak in the flavors.
- Assemble the Skewers: Thread the marinated chicken pieces onto skewers evenly, leaving a little space between pieces for even cooking. If using wooden skewers, soak them in water for 15 minutes prior to prevent burning.
- Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Grill the chicken skewers for about 5-6 minutes per side until the internal temperature reaches 165°F (74°C) and the chicken is nicely charred on the edges. Remove from heat and let rest briefly.
- Make the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, Thai sweet chili sauce, sriracha, and honey until smooth and well combined. Adjust sweetness or spice level to your preference.
- Serve: Generously brush or drizzle the Bang Bang sauce over the grilled chicken skewers. Optionally, serve extra sauce on the side for dipping. Garnish with chopped green onions or cilantro if desired for an extra burst of freshness.
Notes
- For extra juiciness, use chicken thighs instead of breasts.
- Adjust the sriracha quantity based on your spice tolerance.
- Soak wooden skewers before grilling to prevent burning.
- Can be served with steamed rice, noodles or a fresh salad for a complete meal.
- Store leftover chicken and sauce separately in the refrigerator for up to 3 days.
