Topped with melted Colby Jack cheese and fresh parsley, this hearty meal is simple to prepare, requires minimal cleanup, and delivers comforting flavors everyone will love.

Ingredients

Scale

Meat Mixture

  • 2 pounds lean ground beef
  • ½ cup mayonnaise
  • 2 Tablespoons Worcestershire sauce
  • 2 Tablespoons dried minced onions

Vegetables

  • 1 pound baby potatoes (or small potatoes, cut in half)
  • 3 large carrots (peeled and sliced)
  • 1 small white onion (or yellow onion, sliced thinly)

Seasoning & Finishing

  • 2 Tablespoons olive oil
  • 2 Tablespoons Italian seasoning (divided, homemade or store-bought)
  • 8 ounces Colby Jack cheese, grated
  • Fresh parsley (for garnish, optional)

Instructions

  1. Prepare Meat Mixture: In a large bowl, combine the ground beef, mayonnaise, Worcestershire sauce, and dried minced onions. Mix everything thoroughly until well combined to create flavorful burger patties.
  2. Form Patties: Divide the meat mixture evenly and shape into 6 patties, ensuring they are uniform in size for even cooking.
  3. Prep Vegetables: Wash and cut the baby potatoes in half, peel and slice the carrots, and thinly slice the onion. Place all the vegetables into a large mixing bowl.
  4. Season Vegetables (First Half): Drizzle half of the olive oil over the vegetables, sprinkle half of the Italian seasoning, and stir well to coat all pieces evenly.
  5. Season Vegetables (Second Half): Add the remaining olive oil and Italian seasoning to the vegetables, then stir again to distribute the flavors thoroughly.
  6. Assemble Foil Packets: Divide the seasoned vegetables into 6 equal portions and place each portion onto a sheet of heavy-duty aluminum foil. Top each vegetable pile with one hamburger patty.
  7. Seal Packets: Fold the foil over the contents and seal the edges tightly to create individual packets, ensuring no steam escapes during cooking.
  8. Preheat Grill: Heat your grill to medium heat, approximately 325°F (163°C), preparing it for cooking the foil packets.
  9. Grill Packets: Place the foil packets on the grill and cook for 20-25 minutes, turning and gently shaking the packets periodically to prevent burning and promote even cooking.
  10. Check Doneness: When the vegetables are tender and the internal temperature of the hamburger patties reaches 150°F (65.5°C) for medium-well, carefully remove the packets from the grill.
  11. Serve: Open the foil packets carefully, sprinkle the grated Colby Jack cheese on top of the hot patties and vegetables to let it melt, garnish with fresh parsley if desired, and serve immediately.
  12. Store Leftovers: Transfer any leftover contents to an airtight container and store in the refrigerator for up to 3 days.

Notes

  • Use heavy-duty aluminum foil to prevent tearing and leaking of juices during grilling.
  • Adjust cooking time slightly depending on the size of your vegetable pieces and your grill’s heat.
  • For added flavor, consider adding garlic powder or smoked paprika to the vegetable seasoning.
  • Ensure meat patties reach at least 150°F internal temperature for food safety.
  • These foil packets can also be cooked in an oven at 325°F for 25-30 minutes if a grill is unavailable.
  • Leftovers can be reheated in the microwave or oven but may lose some crispness.
