Instructions
- Make the egg mix: Beat the eggs, chopped fresh herbs, salt, and pepper together in a medium bowl using a fork until well combined.
- Cook the omelet: Heat a medium non-stick skillet over medium heat. Once hot, melt a little coconut oil in the pan. Pour the egg mixture into the skillet and let it set for about 30 seconds. Carefully lift the edges in several places, tilting the pan to let uncooked egg flow underneath. Continue cooking for 1 to 2 minutes, making sure not to overcook; the omelet should remain soft and slightly moist.
- Fill the omelet: Place the greens, grated pecorino cheese, and lemon zest on one half of the omelet. Fold the other half over the filling and cook for an additional 30 seconds or until the greens begin to wilt.
- Serve: Transfer the omelet to a plate and serve immediately with sliced avocado and any extra herbs, cheese, or lemon zest you desire for garnish.
