Instructions

  1. Prep: Preheat your oven to 420°F (220°C). Place a dark-colored baking sheet inside the oven to heat up while you prepare the potatoes; this helps achieve better crispness.
  2. Season the Potatoes: In a large bowl, toss the halved fingerling potatoes with the optional oil, garlic powder, paprika, Italian seasoning, salt, and black pepper until all pieces are evenly coated with the spices.
  3. Add Potatoes to Baking Sheet: Carefully remove the hot baking sheet from the oven using oven mitts. Place the butter on the baking sheet and allow it to melt. Toss the seasoned potatoes directly on the pan in the melted butter, then spread them out in a single layer with the cut sides facing down for optimal browning.
  4. Bake: Place the baking sheet back in the oven and bake the potatoes for 25 to 30 minutes, or until they are tender inside and crispy on the outside. For an extra crispy finish, broil the potatoes for an additional 2 to 3 minutes, watching carefully to avoid burning.
