Instructions

  1. Boil the Eggs: Begin by placing the eggs in a single layer in a saucepan and cover them with enough water so there’s about 1 inch of water above the eggs. Bring the water to a rapid boil over high heat. Once boiling, cover the saucepan with a lid, turn off the heat, and let the eggs sit for about 12 minutes.
  2. Cool the Eggs: Remove the eggs from the hot water and transfer them into a bowl of ice water to halt the cooking process and make peeling easier. Let them cool for at least 5 minutes.
  3. Peel the Eggs: Gently tap each egg on a hard surface creating small cracks, then carefully peel off the shells.
  4. Prepare the Eggs for Filling: Slice each egg in half lengthwise and carefully remove the yolks, placing them in a mixing bowl. Arrange the empty egg whites on a serving platter and set aside.
  5. Make the Filling: Mash the egg yolks with a fork until crumbly. Add mayonnaise, Dijon mustard, white vinegar, salt, and pepper to the yolks and mix until smooth and creamy.
  6. Color the Filling: Divide the yolk mixture evenly into three separate bowls. Add green food coloring to one bowl, red food coloring to another, and leave the third bowl uncolored. Stir each bowl until the colors are evenly distributed.
