Description

These Cheese and Chicken Sausage Stuffed Jalapeños are a flavorful appetizer combining the smoky heat of jalapeños with creamy Mexican cheese and savory chicken sausage. Perfectly broiled for a melty finish, they make a delightful snack or party treat served over warm corn tortillas and garnished with fresh cilantro.

Ingredients

Scale

Jalapeños

  • 6-8 Jalapeño peppers

Meat and Cheese

  • 5 oz Mexican chicken sausage
  • 5 oz Queso Asadero cheese, coarsely grated

Additional Ingredients

  • Olive oil (for cooking, about 1 tablespoon)
  • 6-8 corn tortillas
  • Chopped fresh cilantro (for garnish, about 2 tablespoons)
  • Kosher salt (to taste)

Instructions

  1. Boil Jalapeños: In a medium saucepan filled halfway with water, bring to a boil and cook the jalapeños for about 5 minutes until they turn pale green. Remove from water and let them cool completely to handle safely.
  2. Cook Chicken Sausage: Heat olive oil in a skillet over medium heat. Add the Mexican chicken sausage and cook, stirring occasionally, until browned and cooked through, about 5-7 minutes.
  3. Prepare Jalapeños: Using a sharp knife, cut small slits in each cooled jalapeño pepper. Carefully remove the seeds and membranes to reduce the heat and create space for stuffing.
  4. Stuff Jalapeños: Fill each jalapeño with the coarsely grated Queso Asadero cheese, then top with the browned chicken sausage evenly distributed over the cheese.
  5. Broil Jalapeños: Place the stuffed jalapeños on a baking sheet and position under the oven broiler. Broil for 2-5 minutes, watching closely, until the cheese is melted and bubbly.
  6. Serve: Arrange the broiled stuffed jalapeños over warm corn tortillas. Garnish with chopped fresh cilantro and sprinkle with kosher salt to taste. Serve immediately for best flavor.

Notes

  • Boiling the jalapeños before stuffing helps mellow their heat and soften their texture.
  • If you prefer spicier peppers, leave some seeds in, but be cautious.
  • Queso Asadero cheese can be substituted with Monterey Jack or mozzarella for a similar melt.
  • Broiling times may vary depending on your oven; watch carefully to prevent burning.
  • Serve with sour cream or a squeeze of lime for extra flavor if desired.
