Instructions
- Mix the dry ingredients: Add the flour, sugar, baking powder, cinnamon, and salt to a bowl and stir very well until fully combined.
- Mix the wet ingredients: In a large measuring jug, whisk together the egg yolks, buttermilk, oil, and vanilla extract until the mixture is smooth.
- Beat the egg whites: Using electric beaters, beat the egg whites in a clean bowl until stiff peaks form, which will help make your waffles light and fluffy.
- Make the batter: Pour the wet ingredients into the bowl with the dry ingredients and stir just to combine. Then gently fold in the beaten egg whites until incorporated. Finally, fold in the blueberries carefully with just a couple of light stirs to avoid breaking them and overmixing, which can make the waffles dense.
- Bake waffles: Preheat your waffle iron to medium-high heat. Lightly grease it if necessary. Use about 1/4 cup of batter per waffle, scooping with a cookie scoop to reduce mess. Cook according to your waffle iron’s manufacturer instructions until golden and crisp.
