Ingredients
Scale
Main Ingredients
- 2 pounds stew beef
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 ounce envelope birria seasoning packet
- 1 cup beef stock
- 12 count Hawaiian rolls
- 6 slices Colby Jack cheese
- 2 tablespoons butter
- 1/2 teaspoon garlic salt
- 1 tablespoon parsley or cilantro, chopped
Toppings
- Cilantro
- Red onion
- Lime wedges
- Jalapeño slices
Instructions
- Prepare the Meat: Add the stew beef, chopped onion, minced garlic, birria seasoning packet, and beef stock into your slow cooker.
- Slow Cook the Beef: Cook on low heat for 4 to 6 hours until the beef is tender enough to shred easily with a fork.
- Preheat Oven: Set your oven to 350 degrees Fahrenheit to prepare for baking the sliders.
- Prepare Rolls: Slice the Hawaiian rolls in half horizontally and place the bottom halves in a 9×13 inch baking dish.
- Assemble Sliders: Layer the cheese slices evenly on the bottom halves of the rolls. Top the cheese with the shredded beef and any desired toppings like cilantro, red onion, or jalapeños. Place the top halves of the rolls on.
- Make Garlic Butter: In a microwave-safe bowl, melt the butter with garlic salt and chopped parsley in 30-second intervals until fully combined and warm.
- Brush and Bake: Brush the garlic butter mixture over the tops of the rolls. Bake in the preheated oven for 12-15 minutes until the cheese melts and rolls are warmed through.
- Serve: Serve the sliders hot with the cooking liquid from the slow cooker for dipping and lime wedges for squeezing on top.
Notes
- Use leftover birria meat or substitute with any tender slow-cooked beef.
- Adjust the amount of jalapeños based on your heat preference.
- If you prefer a crispier top, broil the sliders for 1-2 minutes at the end of baking, but watch carefully to avoid burning.
- The cooking liquid makes a flavorful dip, so don’t discard it.
- For extra flavor, you can toast the rolls lightly before assembling.
