Cranberry Jam

  • 1 cup cranberries (fresh or frozen)
  • ¼ cup pure maple syrup
  • ¼ cup chopped toasted pecans
  • 1 tablespoon butter
  • 2 teaspoons chopped fresh rosemary
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon fresh lime juice


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a small baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Bake Brie: Place the brie on the prepared baking sheet and bake it for 10 to 15 minutes or until the cheese becomes soft and melty inside. The rind should remain intact but the interior should be creamy.
  3. Make Cranberry Jam: While the brie is baking, combine cranberries, pure maple syrup, chopped toasted pecans, butter, chopped fresh rosemary, salt, and pepper in a small saucepan. Bring the mixture to a boil over medium heat, then boil for 6 to 8 minutes until the mixture becomes thick and syrupy. Remove from heat and stir in fresh lime juice to brighten the flavors.
  4. Assemble and Serve: Carefully transfer the warm baked brie onto a serving dish. Pour the cranberry pecan jam over the top of the brie. For added texture and presentation, garnish with additional chopped toasted pecans if desired. Serve immediately with crackers or slices of baguette to enjoy the perfect combination of creamy cheese and sweet-tart topping.

Notes

  • You can use fresh or frozen cranberries, but if using frozen, do not thaw before cooking.
