Description

These Baileys Cookies and Cream Popsicles combine creamy vanilla and chocolate puddings with the rich flavor of Baileys Irish Cream and crunchy Oreo cookie pieces. Perfect for a boozy dessert treat, they are layered in popsicle molds and frozen to create a delightful, adult-only frozen dessert that’s easy to prepare and sure to impress.

Vanilla Pudding Layer

  • 1 (3.4 oz) package Jell-o Instant Vanilla Pudding
  • 1/2 cup Baileys Irish Cream
  • 3/4 cup coarsely chopped Oreo Cookies

Chocolate Pudding Layer

  • 1 (3.4 oz) package Jell-o Instant Chocolate Pudding
  • 1/2 cup Baileys Irish Cream


Instructions

  1. Prepare Vanilla Pudding: Prepare the vanilla pudding according to the package instructions. Once ready, stir in 1/2 cup of Baileys Irish Cream until well combined. Gently fold in the coarsely chopped Oreo cookies to add texture and flavor.
  2. Prepare Chocolate Pudding: In a separate bowl, prepare the chocolate pudding following the package directions. After mixing, incorporate the remaining 1/2 cup of Baileys Irish Cream until the mixture is smooth.
  3. Fill Pastry Bags: Transfer each pudding mixture into separate pastry bags to make layering easier and neater when filling the popsicle molds.
  4. Layer Mixtures in Molds: Alternate spooning the vanilla and chocolate pudding mixtures into the popsicle molds to create visually appealing layers. Insert the popsicle sticks into each mold before freezing.
  5. Freeze Popsicles: Place the molds in the freezer and allow the popsicles to set for 6-8 hours until fully firm. To release the popsicles from the molds, briefly run warm water over the outside of the molds for a few seconds and gently pull out the popsicles.

Notes

  • Use pastry bags or zip-top bags with the corner snipped off for easy layering of the pudding mixtures.
  • Make sure both pudding mixtures are cooled to room temperature before adding Baileys to prevent curdling.
  • For a stronger Baileys flavor, you can adjust the quantity slightly but be cautious as too much liquid may prevent pudding from setting properly.
